Braeside Eggs 6 eggs,
lightly beaten Mix all ingredients together. Bake at 350 for 40 minutes in a 9 x13-inch greased pan. Cut into squares; let set a few minutes before serving. Yield: approximately 4-6 servings Note: For variety, add green peppers, green onions, mushrooms, shrimp, ham, bacon (cooked), or sausage. _______________________

orange juice Yield: 4 servings Note: When served as the fruit course, at Songbird Prairie, the bananas are sprinkled with a large crystal sugar. When served as a breakfast dessert, it is served topped with a dollop of freshly whipped cream and garnished with an herb leaf (such as mint). It is served in fluted individual dessert dishes. |
Cool Cran-Raspberry Soup
24 ounces frozen raspberries,
thawed In a blender, purée first 4 ingredients together. Place mixture in a large pan and add next 2 ingredients. Bring to a boil, stirring frequently; strain to remove seeds and pulp. Allow to cool, then add yogurt. Mix well. Cool in refrigerator for 2-4 hours. Serve in small bowls with a dollop of yogurt. Garnish, if desired, with a mint sprig or a whole fresh raspberry. Yield: approximately 8 servings. Note: This recipe freezes well and provides a wonderful beginning for breakfast or lunch, especially during the warmer months. __________________
